About this item
Small, golden-skinned fish with a soft, faintly sweet flesh that flakes apart at a nudge. The scales are fine and the bones are small and forgiving, which makes them unusually easy to eat whole. Pan-fry them in a thin film of oil until the skin blisters and crisps, or steam them simply with ginger and a thread of light soy. Their size makes them ideal for a fast weeknight plate.
