Whole scallops left sitting in their shells, the orange roe still attached and the white muscle plump and glossy. Cooking them on the shell keeps the meat tender and lets the juices collect in the cup, so a few minutes under a grill with garlic butter is all it takes. They also lift straight out for searing in a very hot pan, though the shell is where they show best.
